
Ingredients:
For Making Rice:
Basmati Rice. 3 cups
Water 7 cups
Cloves 2
Cinnamon Stick 1
Shah jeera little
Star anise 2
Oil 2 tsp
Salt for taste
Red color:
Beetroot cubed little(1 or 2 tsp)
Water 3 tsp
Yellow color:
Warm milk 1/4 cup
Saffron little
Green color:
Mint leaves little
Coriander leaves. little
Green chilly 2
Water 1/4 cup
For Chicken marination :
Boneless Chicken 1/2 kg
Chicken 65 powder. 1 tsp
Chilly powder. 1 tsp
Garam masala 1/2 tsp
Ginger garlic paste. 1 tsp
Turmeric powder. 1/4 tsp
Salt little
For Biryani masala:
Ghee 1 tsp
Onion 1
Tomato 1
Chilly powder 1 tsp
Coriander powder. 1/2 tsp
Biryani masala. 1 tsp
Garam masala 1/2 tsp
Curd 2 tsp
Salt for taste
Pre-Preparation:
Boil beetroot with 3 tsp of water for 20 seconds.
Once you get red color, remove beetroot and save the water.
RED color is ready.
Soak Saffron in warm milk for 10 to 15 mins.
YELLOW color is ready.
Grind coriander leaves, mint leaves and green chilly with little water.
After making into paste,Divide into half. Save the half portion for making biryani masala.
GREEN color is ready.
Preparing Chicken:
Marinate the chicken with chilly powder, chicken 65 powder, garam masala, turmeric powder, ginger garlic paste and salt for 30 mins.
In the pan, pour 2 tsp of oil, add marinated chicken ,cook for 10 mins.
Now the chicken is ready.
For masala,
In the pan, pour 1 tsp ghee ,add chopped onions, cook it becomes translucent .
Add chopped tomatoes ,chilly powder, coriander powder ,biryani masala ,garam masala ,
salt ,mix it well.
Add curd ,1/4 cup of water, and cook for 5 mins.
Add saved green color mix(coriander, mint & green chilly paste).
Cook for 5 mins .
Add cooked chicken and cook for 10 mins in the low flame.
Once the oil separates and become semi gravy ,switch off the flame.
Chicken biryani masala is ready.
For Rice:
Soak biryani rice for 30 mins.
In the pan,Add 7 cups of water, add all spicy items, salt and oil and bring to boil.
Add soaked rice, cook the rice completely .
Drain the excess water if you have any.
White rice is ready.
Divide the rice into 4 portions and Set aside.
Preparation:
Now Everything is ready.
In 1/4 of rice, add saffron milk, mix it well,Yellow rice ready.
In 1/4 of rice, add green paste, mix it well,Green rice is ready.
In 1/4 of rice, add red color, mix it ,Red rice is ready.
Keep remaining 1/4 of white rice.
In the wide bowl, spread some white rice and fried onion.
Spread yellow rice ,press it gently.
Add half chicken masala, spread it.
Add green rice on the top ,spread it well.
Add red rice ,and spread it and press it gently.
Add the remaining chicken masala ,spread it.
Cover it with remaining 1/4 of white rice, with some fried onion.
Place the plate on the top, flip it ,remove the bowl.
Colorful Rainbow Biryani is ready to serve hot
