
Ingredients:
Seergasamba Rice 2 cups
Boneless chicken 1/2 to 3/4 kg
Turmeric powder. 1/4 tsp
Curd 1/4 cup
Ginger garlic paste. 1 tsp
Onion 1
Red chilly 8 to 10
Cardamom 2
Cloves 2
Cinnamon stick 1
Bay leaves 1
Star anise 2
Ghee 2 tsp
Oil 2 tsp
Lemon juice 2 tsp
Salt for taste
Little mint leaves for garnishing
Banana leaf for covering biryani
Green paste:
Tomato 2
Green chilly 3
Ginger 1 inch
Garlic 5 to 6
Mint leaves little
Coriander leaves little
Method:
Wash and soak biryani rice for 30 mins.
In the pan, boil 5 cups of water and salt, cook rice ,once 75% done, drain the rice and keep aside.
Grind all the items green paste section ,green paste is ready and keep aside.
Boil red chilly in 1 cup of water for 10 mins, grind into paste, red paste is ready.
Marinate the chicken with turmeric powder, curd ,ginger garlic paste ,required salt for 30 mins.
In the large pan, pour oil and ghee, add all spicy items, ,cardamom ,cloves, cinnamon stick ,bay leaves , star anise and fry for few seconds.
Add sliced onions ,cook it becomes golden brown.
Add green paste and cook for 2 mins.
Add red chilly paste, required salt and cook for 5 mins.
Add marinated chicken ,mix it well and cover cook for 15 mins.
Now add rice and mix it gently.
Add 1 cup of water ,mix one time.(I do not have enough water, so added 1 cup)
There should be little water to cover rice(see the pic)
Add lemon juice and mint leaves, cover banana leaf at the top and close the lid.
Cook in the low flame for 15 mins and switch off the flame.
Let it rest for another 15 mins.
Now Yummy Ambur Star Style Boneless Chicken Biryani is ready to serve with Raita and Egg.
