Vegetable Biryani

Ingredients:

Basmati rice. 2 cups

Onion 1

Tomato 1

Carrot and green peas. 1 cup

Green beans 1/2 cup

Potato 1/2 cup

Mint leaves little

Coriander leaves little

Green chilly 2 to 3

Cardamom 2

Star anise 2

Cloves 2

Bay leaves 1

Cinnamon stick 1

Shah jeera 1/4 tsp

Ginger garlic paste. 1 tsp

Curd 1/4 cup

Chilly powder 1 tsp

Coriander powder. 1 tsp

Turmeric powder 1/4 tsp

Garam masala powder 1 tsp

Biryani masala powder 1 tsp

Lemon juice 1 tsp

Coconut milk 1 cup

Salt for taste

Oil 2 tsp

Ghee 2 tsp



Method:

Wash and Soak Biryani rice in the water for 30 mins.

In the cooker, pour oil and 1 tsp of ghee, add cardamom, star anise, cloves, bay leaves, cinnamon stick, shah jeera ,and fry it for few seconds.

Add sliced onions and green chilly, cook till becomes translucent.

Add ginger garlic paste, mix it well.

Add chopped tomatoes and cook till becomes soft.

Add mint leaves and coriander leaves and mix it well.

Add chilly powder, coriander powder, turmeric powder ,garam masala ,biryani masala ,mix it well.

Add Curd and mix it well ,cook for 2 mins,

Add all vegetables and salt, cover cook for 5 to 10 mins.

Add 3 cups of water and cover cook for 5 more mins.

Once it started to boil, add 1 cup of coconut milk ,bring to boil.

Add soaked biryani rice ,required salt, lemon juice , 1tsp of ghee and mix gently one time, & close the lid.

Cook in the medium low ,wait for 2 whistles and switch off the flame.

After pressure release naturally, Open the lid.

Vegetable biryani is ready to serve with raita.
