Mutton Fry

Ingredients:

Mutton 1/4 kg

Turmeric powder 1/4 tsp

Shallots 15 to 20

Ginger garlic paste 1/2 tsp

Curry leaves little

Red chilly 2

Gingelly oil 3 tsp

Salt for taste


Roast and powder:

Black Pepper 1/2 tsp

Cumin seeds 1/2 tsp

Coriander seeds 1/2 tsp

Fennel seeds 1/2 tsp

Red chilly 2

Curry leaves little

Cinnamon stick 1/2


Method:

Pressure cook the mutton with 2 cups of water, turmeric powder, little salt for 4 to 5 whistles and keep aside.(80% cooked)& save the mutton stock.

In the pan ,fry pepper, cumin seeds, coriander seeds, fennel seeds for 30 seconds in low flame.

Add red chilly, curry leaves, cinnamon stick ,fry for another 30 seconds.

Once cool down, grind into powder and keep aside.

In the pan ,pour oil, add chopped shallots and fry till it becomes translucent.

Add curry leaves, red chilly, ginger garlic paste ,fry for few mins.

Add cooked mutton, mix it well.

Add ground powder, little salt and stir it well.

Add mutton stock and cover cook for 10 to 15 mins.

Switch off the flame, once the mutton is dry and roasted well.

Mutton Fry is ready to serve with rice.
