Mutton Dum Biryani

Ingredients:

Mutton with Bone 1/2 kg

Turmeric powder 1/2 tsp

Onion 2

Tomato 1

Curd 3 tsp

Chilly powder 1 tsp

Coriander powder 1 tsp

Garam masala 1 tsp

Biryani masala powder 1 tsp

Ginger garlic paste 1 tsp

Coriander leaves 1/2 bunch

Mint leaves 1/2 bunch

Green chilly 3

Cardamom 2

Star anise 2

Cinnamon stick 2

Bay leaves 2

Oil 5 tsp

Red color water 1 tsp

Yellow color water 1 tsp

Salt for taste


For Rice:

Basmati rice 4 cups

Cardamom 2

Star anise 2

Cinnamon stick 2

Bay leaves 2

Oil 2 tsp

Salt for taste.,


Method:


For rice:

Soak 4 cups of basmati rice in water for 15 mins.

In the large pan,Add 8 cups of water, add all spicy items(cardamom, star anise ,cinnamon, bay leaves), oil & salt.

Once water started to boil, add soaked rice and cook till 80 % is done.

Drain the rice & keep aside.


For masala:

Pressure cook the mutton with 1/4 tsp turmeric powder and salt for 5 to 6 whistles.& keep aside

In the pan, pour 3 tsp of oil, add 1 sliced onion ,fry till it becomes crispy , brown & keep aside.

In the wide pan, pour 2 tsp oil, add spicy items(cardamom, star anise ,cinnamon, bay leaves), sliced onions, cook it becomes translucent.

Add ginger garlic paste, chopped tomatoes, and cook till soft & smooth.

Add Chilly powder, coriander powder,1/4 tsp turmeric powder ,garam masala, biryani masala powder ,little water and cook till raw smell gone.

Add curd, mint leaves, coriander leaves ,green chilly, salt and cook for few more mins.

Add cooked mutton pieces,1 1/2 cups of water and cook for 5 mins.

Take out 1 cup of masala water and keep aside.

Now mutton masala is ready


For layering Biryani:

With the bottom with Mutton masala, spread 1/2 cooked rice.

Add masala water and add other part of cooked rice.

In the top, add mint leaves, fried onion, red color water, yellow color water and cover it with the lid.

In the low flame, cook biryani for 10 mins.

Now Mutton Dum Biryani is ready.While serving ,take gently from the bottom layer,mix and serve with raita.
