
Ingredients:
Parotta 3
Onion 1
Tomato 2
Green chilly 3
Egg 2
Ginger garlic paste 1 tsp
Chilly powder 1 tsp
Turmeric powder 1/4 tsp
Oil 2 tbsp
Fennel seeds 1/2 tsp
Curry leaves little
Chicken salna little (optional)
Salt for taste.
Method:
Shred the parotta finely by hands and keep aside.
In the wide pan,pour oil,add fennel seeds and curry leaves ,fry for 5 secs.
Add chopped onions, fry till it turns little brown ,then add the ginger garlic paste, tomatoes and green chilies .
Add the chilly powder and turmeric powder ,salt and fry until raw smell is gone
Add beaten eggs at this stage, switch to low flame, otherwise the egg will stick to the bottom and cook until eggs becomes scrambled.
Add the parotta and toss well and close the lid in a low flame for 5 mins.
If you have any sharp edge vessel,chop the parrotta.
If you have any chicken gravy/salna ,you can add it to the parotta and cook for another 5 mins.
Now Madurai famous Egg Kothu parotta is ready.
