Ingredients:

Jigarthanda Ice-cream 3 scoops

Jigarthanda Milk 1 cup

Nannari Sarpath 2 tsp

Kadal paasi(small pieces) 5 to 6

(Soak it in the water for over-night)


For Milk & Ice-cream

Whole Fat Milk 6 cups ( 1 1/4 l)

Sugar 6 tsp

Koya 2 tsp

Nannari Sarpath 1 tsp

Heavy Cream 1/4 cup


Method:

For Jigarthanda, we have to make ice cream and milk.


Milk:

In the pan, add 2 tsp sugar, stir in continuously.

In couple of mins ,it changed to brown color, add 2 tsp water.

Mix it well and switch off the flame.

Now Caramel Syrup is ready and keep aside.


In the wide pan, add milk ,bring to boil.

Stir in between to avoid stickiness.

Once Milk reduced to half, add 4 tsp sugar, mix it well.

Once sugar melted, add koya ,mix it well.

Add Caramel Syrup, sarpath ,mix it well ,Let it cool down.

This is Jigarthanda Milk recipe.

I have taken 1 cup of this Jigathanda milk in the fridge .

Keep remaining milk for making ice cream.


Ice-cream:

In the mixie, blend heavy cream and remaining milk together.

Now keep this mixture for 2 hours in freezer.

After 2 hours, Take it out, blend it again in the mixie.

Now Keep it in the air-tight container in the freezer for over night.

Now Ice-cream is ready.


Jigarthanda:

Now Ice-cream, chilled milk, soaked kadal paasi is ready.

In the large glass, add 1 tsp kadal paasi,1 tsp sarpath,1 scoop ice cream,1/2 cup chilled milk, mix it well with spoon. Now everything is well combined.

In the top, add 1 scoop ice cream,1 tsp kadal paasi,1 tsp sarpath.

Now Madurai Special Jigarthanda is ready to serve Chill.
