Egg Fried Rice

Ingredients:

Basmati rice 2 cups

Egg 6

Mixed vegetables 1 cup

Chopped ginger 2 tsp

Chopped garlic 2 tsp

Chopped onion 1 tsp

Chopped capsicum 1 tsp

Chopped green chilly little

Pepper powder 2 tsp

Soy sauce 1 tsp

Vinegar 1 tsp

Hapima fried rice mix 1 tsp(optional)

Oil 2 tsp

Salt for taste

Chopped green onions for garnishing


Method :

In 5 cups of water ,Cook rice with salt.

Once rice is cooked ,drain the remaining water and keep aside.

In the pan, cook mixed vegetables ,salt with little water for 5 mins and keep aside.

I used green peas, carrot and green beans.if you want, you can add cabbage & corn.

In the same pan, add eggs,1 tsp pepper powder, salt and stir it well.

Now scrambled egg is ready and keep aside.

Chop Ginger, garlic, onion ,capsicum, green chilly and keep aside.

Now everything is ready.


In the wok, add 2 tsp of oil, add chopped ginger, garlic, green chilly and fry in low flame for few seconds.

Add chopped onion, fry for few more mins.

Add chopped capsicum ,fry for 1 min.

Add cooked vegetables,1 tsp pepper powder, soy sauce, vinegar and mix it well.

Add scrambled egg and toss it well.

Add cooked rice, hapima mix(optional) and mix it gently.

Once everything combined well, garnish with green onion and serve hot.
