
Ingredients:
Chicken with bone 3/4 kg
Basmati Rice 3 cups
Onion 1
Tomato 1
Green chilly 3
Ginger Garlic Paste 1 1/2 tsp
Mint leaves 1 bunch
Coriander leaves 1 bunch
Cinnamon stick 2 +1
Star anise 1 + 1
Cloves 2 +3
Cardamom 2 + 3
Bay leaves 1+1
Shahjeera 1/2 tsp
Chilly powder 2 tsp
Garam masala 1 tsp
Curd 3 tsp
Lemon juice 1 tsp
Oil 3 tsp
Ghee 2 tsp
Fried onions & mint leaves little for garnishing
Salt for taste
Method::
Marinate the chicken with chilly powder, garam masala, little salt, curd for 30-45 mins.
Soak 3 cups of rice for 30 mins.
In the pan ,pour 1 tsp of oil ,add 1 cinnamon stick ,shahjeera ,1 bay leaves ,3 cardamom ,1 star anise ,3 cloves, fry it, add 6 cups of water and salt ,and bring to boil.
Add soaked rice ,cook till 75% done,Drain it and keep aside.

In the large pan, pour oil, add 2 cinnamon stick,1 bay leaves , 2 cardamom ,1 star anise,2 cloves ,fry for few seconds.
Add thinly sliced onions, cook it gets translucent.
Add ginger garlic paste, green chilly, mint leaves, coriander leaves and cook for one minute.
Add chopped tomatoes, cook till becomes juicy and soft.
Combine marinated chicken and cover cook for 20 to 25 mins.
Once the chicken 75 % done, add cooked basmati rice in the top ,salt ,1 /2 cup of water, sprinkle some fried onions ,mint leaves ,lemon juice,2 tsp of ghee and tightly close the lid, add some weight in the top, cover cook in the low medium flame for 15 mins and Switch off the flame.
Let it sit for 10 more mins.
Mix it gently and Chicken Biriyani is ready to serve with onion raita and boiled egg.
