Coconut Rice

Ingredients:

Cooked Basmati rice 2 cups

Grated coconut 1 cup

Mustard seeds 1 tsp

Urad dal 1 tsp

Channa dal 1 tsp (soak in water for 20 mins)

Red chilly 2

Asafoetida powder 1/4 tsp

Curry leaves 8 to 10

Cashew nuts 5 to 6

Ghee 2 tsp

Salt for taste


Method:

In the pan, pour ghee, add mustard seeds, once they start popping, add urad dal, channa dal, red chilly and fry it.

Add Asafoetida powder, curry leaves &cashew nuts, once nuts turned to golden brown, add coconut fry it.

Once coconut is toasted well ,add the cooked rice, mix well until combined.

Now Hot Coconut Rice is ready to serve.
