Easy Brinjal Fry- Andhra Style

Ingredients:

Brinjal 5

Garlic 6

Red chilly 8

Grated Coconut 2 tsp

Mustard seeds 1 tsp

Urad dal 1 tsp

Channa dal 1 tsp

Curry leaves little

Cumin seeds 1 tsp

Turmeric powder 1/4 tsp

Oil 2 tsp

Salt for taste


Method:

Cut the brinjal lengthwise and immediately put it in the water, so it will not change color.

Grind 7 red chilly, garlic, coconut and keep aside.

In the pan ,pour oil ,add mustard seeds, once it crackled, add urad dal, channa dal, cumin seeds, curry leaves,1 red chilly and saute for few mins.

Add brinjal, turmeric powder ,salt and cover cook for 10 mins.

Last add ground masala ,cook for few more mins.

Now Easy Andhra style brinjal fry is ready to serve with rice.
