Brinjal Fry

Ingredients:

Brinjal 1/4 kg

Onion 1/2

Mustard seeds 1 tsp

Urad dal 1 tsp

Kasmiri chilly powder 1 tsp

Turmeric powder 1/4 tsp

Oil 3 tsp

Salt for taste


Roast and grind:

Coriander seeds 1/2 tsp

Fennel seeds 1/2 tsp

Cumin seeds 1/2 tsp

Fenugreek little

Curry leaves little



Method:

Dry roast all the items ,grind into powder and keep aside.

Cut the brinjal in lengthwise ,put in the water and keep aside.

In the pan, pour oil ,add mustard seeds, once it crackled, add urad dal ,fry it.

Add chopped onions, fry till gets translucent..

Add brinjal without water, kasmiri chilly powder, turmeric powder ,salt and mix it well.

Cover cook in medium flame for 5 mins.

Add ground powder, mix it well and cook for another 10 mins.

Switch off the flame , brinjal is cooked well and roasted.

Garnish with some chopped coriander leaves and serve with rice.
